It is a french custom to make sunday morning crèpes. My father used to make the best ones for us, and he still does when we are at his house. Every sunday he sends us a pancake he has made, and as he travels a lot, it can come from anywhere in the world. The secret of a thin, elastic, french crèpe is a little water!
As I had no cooking inspiration today, so I made sunday crèpes for dinner. Healthy ones, with eggs from the neighbours, speltflour, a little vanilla and almond milk. And I baked them in coconut oil!
